      目的:筛选象皮滑石粉烫制的最佳工艺,分析炮制前后象皮中蛋白质和氨基酸的含量。方法:以粉碎率和醇溶性浸出物为评价指标,采用L9(34)正交试验法,考察烫制温度、烫制时间和翻炒速度;采用凯氏定氮法和氨基酸自动分析仪测定象皮中蛋白质、氨基酸的含量。结果:最佳炮制工艺为100kg象皮加30kg滑石粉,烫制温度350~380℃,以15转/min的速度翻炒3分钟。炮制前后的象皮中均含有16种氨基酸,生象皮中蛋白质含量为92.42%,氨基酸总量为62.79%,滑石粉烫制象皮中蛋白质含量为98.25%,氨基酸总量为67.03%,[结论]优选出的象皮滑石粉烫制工艺稳定可行,重现性好。在该工艺条件下,制象皮的蛋白质和氨基酸含量均略高于生象皮。

      Objective Screening the talcum powder ironing process parameters of corium elephatis, and analyzing the contents of protein and amino acid in corium elephatis before and after processed. Methods Take the crushing rate and alcohol-soluble extractive as evaluation indexes, investigating the boiling temperature, boiling time and stirring speed with the L9 (34) orthogonal test method. Determinate the contents of protein and amino acid in corium elephatis by the Kjeldahl method and amino acid analyzer. Results The optimal processing technology parameters were as follows:100kg corium elephatis should add 30kg talcum powder, the processing temperature is 350-380 ℃, stirring speed 15 r·min-1 processed 3 min. Both the corium elephatis before and after processed have 16 kinds of amino acids. In crude corium elephatis, the content of protein was 92.42%, and the total content of amino acids was 62.79%; While in processed corium elephatis, the content of protein was 98.25%, and the total content of amino acids was 67.03%. Conclusion The selected talcum powder ironing process of corium elephatis is stable, good reproducible. And in the process conditions, both the contents of protein and amino acid in processed corium elephatis were slightly higher than that in crude corium elephatis.
